Florentine Cannelli One Pot

Ingredients:
4-6 slices of bacon, chopped
3 cloves garlic (minced), 1 medium onion (chopped small)
1 package frozen chopped spinach, defrosted & drained
4-5 cups fresh chicken stock (I use homemade)
1 can each Bush's Cannellini, Light Red & Dark Red Kidney, Garbanzo Beans (all drained and rinsed) or more if desired
1/2 cup sun-dried tomatoes, julienned
1 TSP dried basil
Crushed Red Pepper Flakes
Salt
Shredded Parmesan Cheese (fresh is best)
Crispy French-Fried Onions
Directions:
FRY Bacon over high heat in a large stock pot until cooked
ADD Garlic & Onion and sauté until browned. Mix in spinach and sauté two more minutes.
SIMMER Add remaining ingredients & simmer 30-45 minutes.
SEASON Check and season to taste
GARNISH with Crispy Onions and Parmesan
